The first step is to make the mango filling for the mochi. If you’re using fresh mango, dice it into small cubes, and if using puree, spoon it into small dollops onto a sheet of wax paper. Freeze the filling for a little under an hour to make it easier to wrap.

Next, whip up the mochi dough. Mix sugar, water, and mochiko in a microwave-safe bowl. You can add coconut milk to the mixture if you like. Microwave the mixture in intervals, stirring every thirty seconds, until the dough becomes thick and slightly translucent.

Now it is time to shape the mochi. Dust a clean surface with starch, spread the dough, still warm from the microwave, and let it cool slightly.
