  • 2 chickens (each about 3 1/4 pounds), each cut into 2 legs, thighs, and wings, and 4 breast pieces

Marinating Directions

Add the chopped fresh tarragon, Dijon mustard, dry white wine, olive oil, and honey into a blender. Blend until you have a smooth paste. Place the chicken pieces in a large glass bowl and sprinkle them with salt and pepper. Pour the marinade over the chicken and toss to coat. Refrigerate the chicken under the marinade for 2 to 4 hours. You can also marinate the chicken at room temperature for at least one hour.

Grilling Directions

Remove the chicken from the marinade. Keep the marinade for basting the chicken on the grill. Prepare the barbecue for direct grilling over medium heat (180° to 230°C). Place chicken on the grill, cover the barbecue, and let the chicken cook for 5 minutes. Turning the chicken every 5 minutes while basting it with marinade and cook for about 30 minutes. After grilling and basting for about 30 minutes, let the chicken rest on the grill for seven more minutes without busting. You can serve the chicken hot with grilled corn on the cob or warm.

Grilling Peeled Corn on Cob

Grilling corn without the husks is much easier as you do not require to soak them. Remove the husks and place the peeled corn on the grill. Cook for a few minutes while turning it to cook on all sides.

Flavoring the Grilled Corn

Irrespective of your grilling method, you can flavor the corn with garlic butter, ancho chili powder, salt, and pepper.

Grilled Vegetable Salad

Ingredients

  • 2 tablespoons avocado oil
  • 1 medium bell pepper, seeded and quartered
  • 1 medium zucchini with trimmed ends and quartered lengthwise

  • 1 red onion, sliced into rounds  
  • 2 medium size lemons
  • kosher salt & ground black pepper

Grilling Instructions

  • Place the vegetables in a glass bowl
